Apricots contain beta-carotene which helps to prevent free radical damage and gives protection to the eyes. An average sized apricot gives you 17 calories, 0 fats, and 1 gram of fiber. They may be eaten dried or soft.
Next, I’ll strongly recommend the mango fruit. Accounting for approximately 50 percent of all tropical fruits produced worldwide, mango is one of the most extensively exploited fruits—for good reasons. A medium sized mango packs 57 mg of vitamin C—almost your entire daily dose. Considered a model “superfruit”, it boosts your immune system and helps prevent arthritis.
The average sized cantaloupe contains 177 mg of vitamin C—almost twice your recommended daily dose. Half a melon contains approximately 853 mg of potassium, 97 calories, 1 gram of fat, and 2 grams of fiber. The potassium in the cantaloupe helps to lower blood pressure.
Tomatoes, according to a review published in the “Journal of the National Cancer Institute” has been linked (although by limited evidence) to the prevention of certain types of cancer. One medium sized tomato contains 26 calories, 0 fat and 1 gram of fiber.
In the vegetables category, I’ll choose to start with onions. A cup of onions provide 61 calories, 0 fat and 3 grams of fiber. Onions are known to prevent cancer, according to studies. They have been used in Chinese medicine to treat coughs, angina, bacterial infections and breathing problems. The World Health Organization (WHO) supports the use of onions for the treatment of poor appetite and to prevent atherosclerosis. Onion extracts are also recognized by the World Health Organization for providing relief in the treatment of coughs and colds, asthma and bronchitis.
Next in my vegetables list is broccoli. One cup of chopped broccoli contains 25 calories, 0 fats and 3 grams of fiber. Broccoli is rich in a wide array of nutrients with a substantial amount of vitamin C and beta-carotene. Half of the fiber in broccoli is soluble, and half insoluble, helping to meet your needs for both types of fiber. Broccoli belongs to the family of cruciferous vegetables– which are known for reducing the risk of many types of cancer.
Spinach is recommended for its high calcium and iron content. In addition, spinach is an excellent source of vitamin K, vitamin A, manganese, magnesium, iron, vitamin C, vitamin B2, calcium, potassium, and vitamin B6. It is a very good source of dietary fiber, copper, protein, phosphorous, zinc, and vitamin E. This vegetable also contains omega-3 fatty acids in a fairly good proportion. The carotenoids in spinach helps fend of macular degeneration, which is a major cause of blindness in elderly people. One cup of spinach provides 7 calories, 0 fats and 1 gram of fiber.

Skim milk is a great source of vitamin B2, which is important for good vision and, along with vitamin A, could protect against allergies. It also gives calcium and vitamin D. One cup contains 86 calories, 0 fats, and 0 fiber.
In the “seafood” category, the salmon is strongly recommended. Like all cold water fish, salmon is an excellent source of omega-3 fatty acids. Omega-3 fatty acids have been proven to help reduce the risk of cardiac diseases. A 3 ounce portion of salmon contains 127 calories, 4 grams of fats, and 0 fiber. Two other great sources of omega-3 fatty acids in the “seafood” category are mackerel and tuna.

Should we trust flu vaccines?

Unpublished studies question whether seasonal flu shot raises swine flu risk

TORONTO — Unpublished Canadian data are raising concerns about whether it’s a good idea to get a seasonal flu shot this fall and fuelling a drive by some public health officials in Canada to delay, reduce or scrap altogether campaigns to vaccinate against seasonal flu this year.
Drawn from a series of studies from British Columbia, Quebec and Ontario, the data appear to suggest that people who got a seasonal flu shot last year are about twice as likely to catch swine flu as people who didn’t.
A scientific paper has been submitted to a journal and the lead authors — Dr. Danuta Skowronski of the British Columbia Centre for Disease Control and Dr. Gaston De Serres of Laval University — are consequently constrained about what they can say about the work. Journals bar would-be authors from discussing their results before they are published.
Skowronski, who initially declined to speak after news of the findings leaked to the media, said it’s important that the work gets the expert scrutiny the journal peer-review system provides.
“Good scientists know that methods can influence results,” she said Wednesday night from Vancouver.
“For me, it’s very important that we respect the peer-review process as good scientists. Because the implications … are important. And if there are methodologic flaws, we need to be assured that every stone was turned over to make sure what we’re reporting is valid.”
“Epidemiologists are taught there a limited number of explanations for results,” she continued. “Either they’re real, they’re due to chance or they’re due to bias or to confounding. And so it’s going to have to be in one of those categories and that’s true of any study conducted anywhere.”
While few people appear to have actually seen or read the study, the puzzling findings have been a poorly kept secret and many in the public health community in Canada have heard about them.
The findings are causing consternation abroad as well, with officials at public health agencies and even at the World Health Organization worried the alleged link will deter people from getting vaccinated in a fall when many are being urged to get both seasonal and pandemic flu shots.
The Public Health Agency of Canada was informed of the findings some time ago and has been seeking help here and internationally to try to figure out if the effect is real or if the studies are flawed.
“An arms-length review of the various methods is currently underway to assess the validity of the studies relative to that observation,” Dr. David Butler-Jones, Canada’s chief public health officer, said via email.
“We are also examining other data that will help to understand what if any association there is. We look forward to the results of the review and other data to inform our recommendations as we go forward.”
The U.S. Centers for Disease Control also knows of the work. It said it has looked for similar evidence in the United States but sees none.
“It is difficult to speak about a study that has yet to be published, however, as this is an important issue involving the subject of seasonal influenza and the fast moving global pandemic of 2009 H1N1 influenza it is important to note the scientists at the Centers for Disease Control and Prevention have not seen this effect in systems we have reviewed in the United States,” spokesperson Joe Quimby said by email.
A number of influenza and infectious diseases experts know of but are unwilling to speak publicly about the paper. But several were quick to note that British and Australian researchers haven’t seen the phenomenon either. The lack of corroboration in other jurisdictions is “a red flag,” said one expert, who believes the findings will be shown to be due to a study flaws.
Another flu expert who was willing to speak on the record said they do not make sense to him either.
“I cannot think of a good reason why this is biologically likely, especially since we have sufficient evidence now that … there is priming in the population by the way the vaccine is working,” said Dr. Arnold Monto, of the University of Michigan.
He was referring to the fact that studies of swine flu vaccine show a single dose induces a strong and likely protective response in teens and adults. That suggests humankind’s long exposure to seasonal H1N1 viruses has “primed” or awakened our immune systems to recognize the new virus and fight it off.
Dr. Donald Low, chief microbiologist at Toronto’s Mount Sinai Hospital, was reserving judgment on the findings. But he said this kind of effect of previous exposure raising the risk of future illness is seen in some diseases, like dengue fever.
“We don’t see that in flu,” Monto countered.
Low said it is important to get to the bottom of the issue, but in the meantime, delaying the use of seasonal flu vaccine makes sense for logistical reasons. Swine flu activity is on the upswing in the U.S. and in parts of British Columbia, and focusing on speeding delivery of that vaccine makes more sense now, he said.
“If we’re going to try to protect people, this is the virus we should be trying to protect them against,” Low said, suggesting decisions on whether to try to vaccinate against seasonal flu can be done later in the season.
He admitted the controversy could undermine the public’s willingness to be vaccinated against influenza.
“This is obviously difficult for public to be able to digest this,” he said. “There’s a crying need here for a prospective randomized controlled study.”
That type of study — which is not the kind on which the findings are based — is considered the gold standard of medical evidence. They are also costly and Skowronski said it wouldn’t be feasible to mount one in time to help public health officials faced with the current dilemma of whether to push seasonal flu vaccine this year or not.
“If it was possible, we would have attempted it,” she said.
Growing your own herbs

There are so many herb plants to choose from, it can be a bit daunting to the beginning herb gardener. A good source of information that you probably have is your cookbook, which often devotes a chapter or two to the uses of different herbs as flavorings and accents.
Planting a Basic Herb Garden
Get acquainted with herb gardening by growing herbs you think you’ll use, plus throw in one or two that sound interesting to you. Herb gardens can range in size from small containers to vast outdoor gardens.
To best learn herb gardening, start simple with a small, sunny plot, or use a clay pot filled with potting soil.
The Two Big Needs that herbs have are:
- lots of sun, and
- well-drained soil.
Most herbs have a preference of full or partial sun, and the seed package or nursery will have this information clearly stated. Most herbs will not do well in very wet soil, and watering about every 2-3 days is usually sufficient. Raised garden beds are a good fit for herb gardens. They have excellent drainage and can be easily arranged for proper sunlight.
When planting herb seeds, cover them lightly with soil, and don’t plant the seeds too deep. A good rule of thumb with herb gardening is “the smaller the seed, the shallower you sow.” If you are using young herb plants already started in growing trays, simply transplant them into your pots or garden bed. Sometimes the plants in the trays are dry; if so, water them first before planting them.
Finally, remember that annual herbs (herb plants which only grow for one season and then die) and perennial herbs (herb plants which will return the following year) do best when planted separately. This avoids disrupting the perennial plants’ roots when it is time to dig out the dead annuals. It also prevents leaving dead root pieces behind which can contribute to fungus growth.
Grow Fresh Herbs for Cooking
Cooking with fresh herbs from your garden is a wonderful experience. To get started, here are gardening tips for two well-known herbs that are great for beginning herb gardeners.
Sweet Basil — Sweet basil leaves are good in salads, and are a main flavoring ingredient in tomato dishes such as spaghetti and marinara sauce. In the northern climates, basil is usually grown as an annual plant. In milder climates, sweet basil will return each year on its own, and therefore is considered a perennial plant.
The sweet basil herb is a pleasure to grow because it thrives in average soil, and likes sun or partial shade. Sow the seeds after danger of frost is over, or start them indoors about eight weeks before growing season and then transplant them outside. You can also purchase ready-to-grow starter plants from nurseries and through catalogs.
It’s easy to promote the bushiness of the basil plant leaves by pinching and clipping the herb throughout the summer. Use the leaves fresh during the summer growth months, and in the fall, dry the leaves and store them for use during the winter.
Garlic — Garlic is full of minerals and nutrients, and is known to have great medicinal properties. It is a staple in every chef’s kitchen for cooking dishes from chicken and pasta to seafood and vegetables. We’ve all seen garlic bulbs at the grocery store… but did you know that one simple garlic bulb has enough cloves to begin a garden full of garlic plants? Here’s what you do:
When spring arrives and the weather has begun to turn warm, prepare a small garden bed in a sunny spot. Take the cloves and place them, pointy side up, in the soil. Plant them in clusters, or rows, and put a light layer of topsoil over them with some compost mixed in. When fall arrives, lift the garlic bulbs out of their bed.
Dry the garlic by slicing the bulbs into thin slices and placing them on a rack at room temperature. You can also store the bulbs by braiding the stalks and hanging the garlic in a dark, cool space. You may also freeze the entire garlic bulb!

Keep baby healthy, Make your own baby food
Making your own baby food will ensure that what your child is eating is fresh, nutritious and free of
additives. By making your own baby foods, you’ll be saving money, up to 50%. And to top it off, it’s
easy; making baby food at home is probably a lot less time-consuming than you may have thought.
In order to make your own baby foods, you’ll need something to cook in. A steamer basket is cheap
and by cooking fruits and vegetables in it, you’ll be sure of keeping the nutrients in the food, instead
of in the cooking water.
To puree your foods, you can use a fork, a food mill or blender. A blender quickly purees almost
anything into the finest consistency. When your baby first starts on solids, you’ll be pureeing things to
a very fine consistency and, as baby gets a little older, you will make foods a little coarser.
You may wish to buy a food mill which comes in large and small sizes. It is very handy and
inexpensive. The food mill strains most cooked foods to a very smooth consistency, although meats
can be a problem as they will have a coarser texture.
As babies are susceptible to digestive upsets, you’ll want to take note of the following tips
concerning the handling of foods:
always work with clean hands.
always use clean utensils.
prepare foods immediately upon removing them from the refrigerator.
freeze immediately after cooking any foods you want to store.
You can prepare large amounts of foods at once and freeze them. Take your prepared foods and
plop by spoonfuls onto a baking sheet. Freeze the plops right away and then take them off the sheet
when they are frozen and put them into plastic bags. Label and date. You can also freeze the food in
plastic “pop out” ice cube trays. Small Tupperware jars with lids serve the same purpose and stack
easily. Frozen baby foods can be stored for up to two months.
When you take frozen foods out for baby, warm the food in a cup placed in a saucepan of boiling
water with a lid on.
Cereals are typically the first foods given to a baby because they contain lots of iron. You can buy
the commercial baby cereals, or prepare your own, by running oatmeal through your blender, for
instance.
Fruits are generally given next. Except for raw, mashed banana, you will need to cook all other fruits
till they are soft.
Try making your own applesauce and pear sauce; don’t add any sugar, as these fruits are sweet
enough on their own. You can also peel peaches, plums and apricots and boil or steam them.
Use fresh vegetables whenever possible in order to provide the best nutrition and flavour for your
baby. Frozen vegetables are better to use than canned. Steaming vegetables is the best method of
preparation. Carrots and sweet potato are two popular choices to begin with.
Yogurt, mashed cottage cheese, mashed pumpkin, baked potato, avocado and tofu (oriental soy
bean curd) are all popular with babies. One good idea is to blend together cottage cheese, banana
and fresh orange juice – delicious!
Meats should be added slowly. They can be boiled or broiled, then put in the blender with a little
milk and perhaps banana or cream of rice to get the right consistency. Chicken is generally the first
meat baby is introduced to and usually goes down fairly well.
There is no rush to start your baby on solid foods. Milk is his most important food. Your doctor’s
recommendations and your own intuition will help you to know when to begin introducing solids to
your baby’s diet. Always remember to be patient with your baby and allow at least a few days
between newly added foods to make sure baby doesn’t suffer any reactions.
